After all, we know the money is going to advertising, and not into the meticulous labor required of genuinely fine wine. In the rustic village of Congy, just ten minutes southwest of the famed Cote des Blancs, Sebastian Girost farms the vines his family has worked since the 1920’s, separately vinifying wines from his 22 different individual plots before a rigorous assemblage process and aging in old oak sourced from top tier Burgundy and Champagne producers including Egly-Ouriet. With his careful blending work and judicious use of oak, his single vintage bottlings are accessible and expressive right away and can just as easily stand the test of time in your cellar. The 2017 vintage shows effusive fruit character, with damson plum, ripe lemon, and bright apple lightly wreathed with linden blossom and acacia honey, all underlined by a smoke-kissed rocky-chalky minerality. This vintage gem is eminently suitable for aperitif or for pairing with spicy maki or General Tso’s chicken. Cheers to the stalwart folks steadfastly farming and vinifying grower Champagnes!
