Locally made Chardonnay from a slightly riper vintage. Dry and light, with a fleshy tropical fruit dimension. We love it paired with with tinned sardines and olives. A third of the grapes get pressed whole cluster into stainless steel, a third gets pressed whole cluster into old barrels and the final third gets crushed/destemmed and soaked on the skins for 48 hours before pressing into barrels for fermentation.
