One of our favorite Italian whites, this is a crisp, dry, mineral-driven wine with sturdy texture and satisfying layers of depth. Mild yellow apple melds well with earthy roasted fennel and wildflower honey notes and a persistent dry and stony minerality. With its mid-weight, discreet fruit, and dry finish, its incredibly versatile, good for all seasons, and plays well with a wide range of dishes whether white fish, poultry, mushrooms, or aged parmesan and olives.

Coenobium is the Latin word for monastery and the wine is produced by a monastery community of dedicated Cistercian sisters in Lazio, Umbria. They have a long history of producing wine, but the larger wine world really took notice of them when Umbrian natural wine legend Paolo Bea started advising them in the early 2000’s. This bottle was a standout in Fog’s wine list back around 2015 when hardly one case would make it to the state of Maine!
