Minnow Cod Liver
Sustainably caught in the clear, cold waters of Iceland’s Westfjord region, wild cod is brought fresh to the cannery in Isafjordur. The livers are seasoned with salt, and then during the canning process the oil is expelled and fills the can. Comparable to the rich buttery quality of foie gras this delicacy is ironically rather healthy, brimming with omega-3s and vitamins A and D. We love to enjoy them straight from the can, on angel hair pasta, or topping a toast, perhaps with chives or a bit of lemon zest.
