The bouquet is bursting with vivid florals and ethereal berry notions. The palate delivers subtly spiced red berries along a slick and satisfying texture, with a deft lick of acidity that keeps things juicy and mouthwatering at the lingering and vibrating finish. How is a wine both thrillingly sophisticated and in the same moment fairly straightforward and discreet? If we knew the secret, we’d make wine like this…
Patrick Bouju of Domaine de La Boheme is one of those winemakers with a personal stake in making wines without chemical intervention. Initially under the impression that he just had a distaste for wine, it turned out he had a real intolerance of sulfur, ultimately a liberating discovery that inspired him to settle in Auvergne and make purist wines, eschewing every form of chemical addition and mechanization, even working with horses in lieu of tractors.
