Patrick Bouju of Domaine de La Boheme is one of those winemakers with a personal stake in making wines without chemical intervention. Initially under the impression that he just had a distaste for wine, it turned out he had a real intolerance of sulfur, ultimately a liberating discovery that inspired him to settle in Auvergne and make purist wines, eschewing every form of chemical addition and mechanization, even working with horses in lieu of tractors.
