Philippe Cartoux of Domaine des Espiers was so pleased that he was able to craft such a beautiful, balanced, and classic expression of clairette using only 9 milligrams of sulfites per liter, that he decided to name the wine “9 mg”. This is truly an boast-worthy accomplishment, showing respect for the terroir of Sablet and environmental sustainability while still crafting a superbly polished wine going nowhere near the “funk” of some natural wines.
