"Cuvée D'Automne" is a showcase of Jura-style winemaking, harmonizing mineral-driven chardonnay with the nutty accents of sous-voile savagnin. (In sous-voile wine-making, a layer of yeast covers the wine protecting it from oxidization and imparting rich flavors. In Spain, this is known as aging under flor in the making of sherry.) The result is a complex and decadent wine of contemplation that will compliment all sorts of cheeses, paté, or duck, whether a seared breast or confit leg.
