This charming and delicate single-vineyard sherry is crafted in the manzanilla pasada style, sitting comfortably between the freshness of a fino and the nutty oxidization of an amontillado. Showing some real depth from its solera of wines averaging 15-18 years old, it is also topped up to carefully control oxidization levels. To the senses it presents a poise between fresh green fruit element and nutty almost-caramel notes from the patient aging. The palomino grapes are grown on a well-regarded vineyard, Balbaina Alta, right near the Atlantic, so there’s also a charming vein of saline minerality adding a lively crispness.
